DESCRIPTION: A scalped beef gullet is trimmed free of tonsil, salivary glands and hinge bone. The windpipe is removed from the gullet and the meat on the exterior of the gullet is removed. The gullet is then split and flushed of foreign material. It should be noted that the meat removed from the outside of the gullet may only be sold as an inedible product. The presence of the thyroid gland within the gullet meat makes it unfit for human consumption.
PACKAGING: Scalped gullets are lightly denatured with liquid charcoal and packed in even weight sixty pound boxes which measure 21-1/2" x 16" x 6". The carton should be one which has been approved for use with inedible products. The side of the carton should be labeled "Inedible Beef Gullets (Scalped)" and the carton top should be strapped securely in place.
