Description: The paunch is cleaned well prior to being scalded. The water temperature and wash cycle should result in a finished product which is free of fetal material, hair and molasses balls. Chemical formulations for cleansing agents will vary and each plant should have its own formula on file. The yield standard is 14.5 pounds per 1000 pounds of live weight.
Packaging: The tripe is packed in 60 pound net weight curtain-coated cartons, measuring 21-1/2" x 16" x 6". The label should read "Certified Beef Trim For Export Only To Mexico".
Customer Base: Imported in Mexico. Competes directly with Edible Tripe. The Certified Tripe is demanded because of less chemical odor.
Customer Utilization: This product is used for "Menudo" which is a soup.
